Short-crust pastry

Flour, all-purpose  275g 9oz 2 cups
Salt  1 teaspoon
Butter 185g, 6oz
Ice-cold Water 100ml, 1/3 cup

Cut the butter into the flour and salt with a pastry blender. Sprinkle in the water. Mix it all together lightly, and gather it into a ball.

This is enough for two pie crusts.

The prepared pastry can be stored in a zip-lock bag in the freezer.
