Val‘s Flan

Flour, all purpose 1 cup
Salt a pinch
Sugar, granulated 2 tablespoons
Butter ½cup, 4oz, 120g
Vinegar 1 tablespoon

Butter 4oz, 120g
Sugar 4oz, 120g
Almonds, ground 4oz, 120g
Eggs 2
Flour 1oz, 32g
Almond essence or Kirsch

Combine the flour, salt and sugar, cut in the butter and work to bread crumb consistency. Sprinkle the vinegar over the dough and toss with a fork. press into a 10inch/250mm pie plate, making a ½inch/12mm edge all around.

Bake at 400°F, 200°C for about 30 minutes.


You may also put the following filling on the flan before baking:-

Soften the butter, add the sugar and cream them together until light and fluffy. Beat in the eggs and then fold in the almonds, flour and flavourings. Pour this over the uncooked flan case and bake the two together.

When cool, glaze with apricot jam and arrange pear or peach segments over the top.

Serve with cream.
