ANZAC Biscuits
Flour 1 cup
Raising Agent 1½ teaspoons
Ground Ginger 1 teaspoon
Cinnamon powder ½ teaspoon
Rolled Oats 2 cups
Currants 1 cup
Butter, melted 150g, 5oz
Brown Sugar 125g, 4oz
Golden Syrup
or Treacle
1 tablespoon
Boiling water 5 - 6 tablespoons

Soak the currants in 5 or 6 tablespoons of boiling water, until they are plump and swollen. Use a microwave-able bowl (see the next step)

Add the butter, sugar, Golden Syrup or treacle to the bowl of plump currants and water. Melt the mixture in the microwave.

Sift the flour, spices and raising agent together, and stir into the oats.

Next add the melted butter, sugar, syrup and currant ingredients. Mix well.

Drop tablespoonsfull on trays covered with baking paper and bake at 200°C for about 30 minutes.

Replace the Golden Syrup with Black Treacle for a darker biscuit.

The best secret ingredient is a small pinch of chilli powder - a smidgen. It really just enhances the flavour of the spices. Try it if you don't believe me!
