Roasted Capsicum Dip - “Nose bleed”
Red Capsicum 1, roasted
Spring Onion 1, thinly sliced
Tomato paste 1 tablespoon
Shredded Basil 1 tablespoon
Balsamic Vinegar 1 tablespoon
Cream Cheese or Quark 65 g
Cracked Black Pepper to taste
Salt to taste

Finely chop or shred ¼ of the capsicum and the spring onion, put aside for a garnish.

Place the rest of the capsicum and all of the other ingredients into a bowl and process until a smooth mixture is obtained.

Stir in the capsicum and spring onion garnish.

Chill and serve on toasted rounds or on crackers, Grommit!
