|Quark - Anchovy Dip|

Mash the quark with a fork and thin it with the yoghurt.
Add the diced anchovies, onion, Balsamic vinegar, Nam Pla and Worcestershire sauce, and a few shakes of Tabasco.
Season with about ¾ teaspoon salt and a good grind of mixed peppercorns.
Mix it all evenly to a smooth paste with a fork.
Serve with crackers.
Tastes better the next day as the flavours blend together.
