Quark - Anchovy Dip

Quark 100 g
Anchovy fillets 4, finely chopped
Onion ½ small, finely chopped
Balsamic Vinegar ½ teaspoon
Nam Pla - Thai fish sauce ½ teaspoon
Worcestershire sauce ¼ teaspoon
Tabasco sauce to taste
Yoghurt 1 tablespoons
Salt and freshly ground Pepper

Mash the quark with a fork and thin it with the yoghurt.

Add the diced anchovies, onion, Balsamic vinegar, Nam Pla and Worcestershire sauce, and a few shakes of Tabasco.

Season with about ¾ teaspoon salt and a good grind of mixed peppercorns.

Mix it all evenly to a smooth paste with a fork.

Serve with crackers.

Tastes better the next day as the flavours blend together.
