Tahina Sauce
Sesame oil 2 tablespoons
Lemon juice 1½ tablespoons
Water 1 tablespoon
Garlic 1 clove
Salt pinch
Chopped parsley for garnish

Put the oil in small bowl, add the water and lemon juice alternately, and mix until it's the consistency of thick cream.

Crush the garlic separately and work in the salt.

Add the garlic-salt mixture to the tahina. Do not over beat.

Serve in a shallow saucer or small bowl, with parsley sprinkled on top.

Makes about ½ cup.
