Chop and sauté the onion in butter and olive oil.
Cut the chicken into bite sized pieces, sauté it in butter and olive oil.
Cut the smoked speck into small pieces similar in size to the chicken pieces. Saute and remove them to a pie dish, as soon as they are cooked.
Chop the potatoes fairly small, and boil lightly. Drain and add to the cooked chicken and speck.
Thinly slice the mushrooms and add them to the top of the pie contents. Spread the frozen peas over the top.
Add more butter or oil to the pan in which you cooked the chicken, add the flour and garam masala, stirring all the time, adding up to ½ cup of stock to make a roux. Season to taste.
Pour the roux over the contents of the pie
Top with short crust pastry and bake in a hot oven ‘til golden. 200°F for 40 minutes.
Serve with Sookhe Aloo - (potatoes with ginger and garlic)
