Roast Goat - Halal
Leg of Goat 1.8 to 2 Kg
Oil ½ cup
Oregano 1 tablespoon
Black Pepper 1½ teaspoons
Salt 1½ teaspoons
Lemon Juice 2 tablespoons
White Vinegar 1 tablespoon
finely chopped

2 teaspoons
Green Ginger
finely chopped

1 teaspoon

Make a paste of the flavour ingredients.

Coat the leg completely with this paste, wrap it up with foil and leave to marinade for at least two hours.

Still wrapped in its foil, bake the goat in a hot oven, 200°C, for 40 minutes, then reduce the the heat to 175°C and bake for a further 2 hours. Check for clear running juice when the leg is pricked with a skewer.

Let the cooked joint rest in a warm place for at least 20 minutes before carving and serving.
