Turkey Breast 1.5kg
Honey Ginger Glaze
Light Soy Sauce 50ml
Honey 2 tablespoons
Ginger, grated 1 teaspoon
Garlic 1 clove, crushed
lemon juice 2 teaspoons

A 1.5kg Turkey breast roll will serve 6-8 people.

Stuff the butterflied breasts with chestnut & sausage stuffing,

Secure as a roll with string and wrap tightly in heavy foil.

Cook at 180°C for 60 minutes.

Turn the oven up to 200°C

Honey Ginger Glaze:
Combine the soy, honey, ginger, garlic and lemon juice and heat through in a saucepan.

Remove the foil completely from ther meat, brush the breast well with honey ginger glaze and cook for a further 20 minutes until golden brown.

Let the meat rest for 10 minutes before carving.


We used "Aldinga Turkeys" brand, and it was excelent. The Honey Ginger glaze recipe is off their carton.
