Beat all the ingredients well together until bubbles form. The batter improves if it is left to stand for an hour or so.
Preheat the oven to 220°C
Coat the insides of twelve deep patty pans with a little hot peanut oil, half fill with batter.
Cook near the top of the hot oven for about 30 minutes, until the puddings are golden and puffy.
