Cajun Spice Mix
Paprika 1 teaspoon
Cayenne ½ teaspoon
Black pepper 1 teaspoon
White pepper ½ teaspoon
Garlic powder ½ teaspoon
Oregano, dried ½ teaspoon
Onion powder ½ teaspoon
Thyme, dried ½ teaspoon
Salt 1 teaspoon

This is the traditional spice mixture for gumbo.

It also makes a wonderful tasty crust for pan-frying fish fillets.
Coat the fish with melted butter, then rub with the spice mix.
Let the fillets rest for ½ hour in the refrigerator before shallow frying in hot oil.
