Dice the tomato and avocado to make a salsa, season with salt and pepper and ¼ teaspoon crushed chilli. Cover closely with cling film and refrigerate until needed.
Thinly slice the onion and saute in a little oil until golden. Sprinkle with a little sugar to enhance the caramelisation. Set aside.
Fry the sausage in the remaining oil. Covering the pan reduces the spatter over the stove. Slice the cooked sausage in half lengthwise.
Cut a piece of crusty French Stick just longer than the sausage. Butterfly the bread by cutting it in half, almost right through. Spread it open.
Top with grated cheese.
Along one side spread about a tablespoon of Hommus, and the same amount of Tzadziki along the other.
Press the sides of the bread together to consolidate the sandwich, eat and enjoy.
