Smoked Mussel Sauce
Smoked mussels 250g, coarsely chopped
Onion large one, finely chopped
Butter 3 tablespoons
Flour 3 tablespoons
Milk enough to make a sauce
Cajun spice ½ tablespoon
Ground Cumin ½ tablespoon
Nutmeg ½ teaspoon
Salt & Pepper to taste

Saute the finely chopped onion with the spices in 1 tablespoon of butter until softened.

Reduce the heat and stir in the rest of the butter and flour.

Make a paste and gradually add milk to make a fairly thick 'white' sauce.

Add the smoked mussels and gently simmer until just heated through.

Serve with fresh pasta.
