Polenta

Water 6 cups
Polenta
(½ fine, ½ coarse)
2 cups
Butter “a generous knob”
Olive oil 1 teaspoon
Salt 1 teaspoon
Pepper to taste
Grated Cheddar/Parmesan - or both

Bring the water to a boil, and slowly add the Polenta, stirring constantly (use a whisk when the Polenta forms lumps!).

Stir until thickened and add a knob of butter and about three tablespoons of grated cheese.

You can add flakes of dried chilli to spice it up.

 

Try adding re-constituted dried mushrooms or sun-dried tomatoes.
