The tomatoes need to be ripe and tasty, I prefer the smaller, slightly dusty - non-glossy looking variety. Use your nose when you buy, if they smell of tomato, they’ll probably taste of tomato!
Chop them up into small cubes.
Dice the onion and finely chop the garlic, fry them in oil until soft and quite coloured.
Add the chopped tomatoes and cook for 15-20 minutes with a lid on the pan.
Pour in the wine, add the sugar and continue cooking. Leaving the lid off will let the alcohol escape and some of the liquid evaporate. Melt in the cubes of tomato paste, (you do store your stock of paste in ice cube trays, don’t you?) then toss in the sun-dried tomatoes and oregano.
Leave to simmer very slowly on a low heat for as long as you can wait. When the mixture is thick enough, adjust the seasoning, adding salt to taste.
Eat with a bowl of Phil’s 3x3x3 pasta and grated Parmesan.
