Scrape the flesh of an avocado into a bowl, add the garlic, onion, lemon juice, and Tabasco sauce, mash it all together and cover with cling-film until you’re ready to use it.
Press the film down onto the surface to exclude all of the air, it’ll stop it going brown.

Lay slices of smoked salmon on a board, just big enough to wrap singly around a teaspoonful of guacomole. Fold the salmon over the guacomole and tie with blanched chives.
