Fry the onion until it is golden, try not to let it brown too much. Give the garlic a quick heat through in the frying pan too, it doesn't need much cooking.
Add the onion and garlic to the chicken stock and bring it to a boil. Adjust the seasoning to your taste.
Float slices of toast covered with grated cheese on the bowls of hot soup just before serving. If possible, brown the cheese under the grill.
